We found this recipe on the internet a long time ago and promptly lost it. However, it has a very short ingredients list, so we were able to remember it.
1 lb shrimp (peeled and de-veined)
2 chipotle peppers in adobo sauce, finely chopped
1/4 cup honey
1/2 cup minced cilantro (more or less to taste)
In a gallon-sized plastic zipper bag, add shrimp, chipotle, and honey. Marinate for at least 30 minutes. Skewer shrimp and grill for 3-5 minutes per side, or until done.
Remove from grill and sprinkle with cilantro.
This recipe is incredibly easy and delicious. I usually buy some trader joe's frozen whole shrimp. They're pretty cheap, and they grill well.
